Spinach (Part 1: Recipe & Prep)

I made some more peas over the weekend and Abigail ate her way through them in half a day – it was amazing (I even bulked them up with oatmeal and it didn’t slow her down whatsoever).  So once the peas had been demolished, I realized I needed to make something new.  After searching through my nearly empty refrigerator (note to self: go to the grocery store today), I quickly came to learn that I only had one option.

Spinach.

I love spinach. 7x7xDaddy loves spinach. Popeye loves spinach. So Abby should like spinach, right?  We’ll see…for now, let’s focus on the preparation of Spinach Puree:

Step 1: Grab some Spinach from the store…

Step 2: Thoroughly rinse the spinach and pick out any damaged (ie – totally disgusting looking) leaves

Step 3: Whip out your handy dandy steamer basket and steam spinach until the leaves shrink and appear wilted (I think I overdid this part – whoops!)

Step 4: Drain and puree spinach in blender (or Magic Bullet!)

Step 5: Tell your little one it’s going to taste amazing (even if they don’t look all that convinced)…
